VEGAN HAMBURGER WITH TARTUFATA

Ingredients for 1 sandwich

  • 1 saffron and turmeric bun (or an artisanal bun of your choice)
  • 1 seitan burger (vegan meat substitute) (chicken or pork burger would work as well!)
  • 1 bunch of kale or spinach
  • 1 1/2 tablespoons of tartufata
  • 1 roasted red pepper
  • 2 tablespoons of virgin olive oil

Burger Sauce:

Preparation
Prepare the sauce by tossing the already cooked corn in a pan, season with salt and pepper and add a glass of water.
Once heated through and the water has evaporated add the turmeric and toss together. Remove from heat and blend to create a smooth sauce.  

Divide the bun in half, spread the tartufata on the bottom, add the kale (or spinach). Meanwhile sauté the burger in a little extra virgin olive oil. Once cooked add to the bun. Top with the roasted red pepper and the corn sauce.
