Characterized by a marked density, it has a particularly versatile use and excellent value for money. Suitable for use on refined salads but at the same time on both fresh and seasoned cheeses (Parmigiano Reggiano, Grana Padano), as well as in the preparation of sauces to accompany particularly fine dishes. With a typical sweetness of aged balsamic, and a hint of creaminess it gives an unmistakable touch to any dish.
SARAFINO BALSAMIC VINEGARS
Our story begins with grandfather Arduino and grandma Zina. After many years of work in the countryside of lower Modena, with their lifesavings they managed to buy an old cottage surrounded by a vineyard. Their son Felice, with his wife, started the progressive conversion of the vineyards towards becoming organic and the biodynamic. In the 70s, this was considered madness. The profound respect for nature has allowed us to overcome all difficulties. In the early 80s, our agricultural company, when in Italy the organic certification did not exist, respected the German biodynamic regulations. The certification, in those times, was therefore issued by a German control body (Demeter). In the same years the production of the Traditional Balsamic Vinegar of Modena began. Even today our vinegar factory is the only one in the world to be certified organic and biodynamic. This is perhaps one of our greatest accomplishments.The Guerzoni farm is linked to the history of the Guerzoni family, who have always cultivated the land. Today we remain as 3 to continue the family tradition: Felice, Iride and Lorenzo.
Guerzoni, was the first biodynamic balsamic vinegar producer in Italy!

I have just come back from a 3 week trip back east home to Montreal. I hadn’t been home to Montreal or Ottawa since 95. Can you imagine?

The way that my sea salt flakes and lime and then Luna… exploded with a taste of sweet on the tongue…and I was in heaven. It was fitting as the whole trip was like this. When I left Montreal after using it almost everyday…I was saddened to leave it behind…although I know my room Attendant would adore it too. The consistency and exceptional quality well…I can’t say enough, and find it hard to put it all into words.
