The family tradition of cultivating olives dates back more than 5 generations. Every step in the creation of this olive oil is taken with the goal of quality in mind: From the care of olive trees to the early harvesting of olives which are cold pressed in less than 6 hours. They work with passion and rigour with the help of olive oil experts and submit their olives and EVOO to strict quality controls both internal and external. They produce limited quantities and only bottle on demand.They know that they cannot guarantee the quality if they are not responsible for the entire development process of their EVOO, so they control everything in the process from beginning to end.
The estate of more than 3,000 acres is located in southern Castilla-La Mancha, Spain. There are more than 12,000 olive trees, which are grown at an average altitude of 830 meters above sea level. This privileged location, along with a continental Mediterranean climate, make it the perfect place for olive growing.
