MAPLE DIJON CHICKEN

Cool days call for cozy dinners! This healthy, one-pan Maple Dijon Chicken is a fast-pass to wholesome warmth. Quick to prepare, easy to clean up, and a perfect balance of sweet and savoury … need we say more?? 

Serves 4

Ingredients

For the chicken:

Directions:

  1. Preheat oven to 425F.
  2. Spread Virgin Olive Oil on the bottom of large cast iron skillet. Add the chicken and season with paprika.
  3. In a medium bowl, whisk together the mustard, maple syrup, apple cider vinegar and sea salt.
  4. Spoon 1/3 of the sauce over the chicken thighs.
  5. Place the chicken in the oven and bake for 10 minutes.
  6. Toss veggies in Virgin Olive Oil, sea salt, pepper, and nutmeg/cinnamon.
  7. Remove the skillet from the oven and spoon half of the remaining sauce over top of the chicken.
  8. Add the sweet potatoes and return the skillet to the oven. Bake for another 10 minutes.
  9. Remove skillet from the oven and spoon remaining sauce over top. Add in the brussels sprouts.
  10. Return the skillet to the oven and continue baking for 20 minutes or until the potatoes and brussels sprouts are fork-tender and the chicken has reached an internal temperature of 165F.
  11. Enjoy!
