Directions:
1. Prepare the marinade - In a bowl, combine truffle mustard, dijon mustard, garlic, rosemary, lemon zest, and extra virgin olive oil. Season with salt and pepper. Mix until smooth and aromatic.
2. Marinate the lamb - Pat the lamb dry and lightly score if using a leg. Rub the marinade evenly over the meat. Allow to marinate for at least 1 hour, or overnight for best results.
3. Roast - Preheat oven to 200°C / 400°F.
