Cool days call for cozy dinners! This healthy, one-pan Maple Dijon Chicken is a fast-pass to wholesome warmth. Quick to prepare, easy to clean up, and a perfect balance of sweet and savoury … need we say more??
Serves 4
Ingredients
For the chicken:
- 4 bone-in, skin-on chicken thighs (boneless skinless optional if preferred)
- 2 tsp Virgin Olive Oil – Olearia San Giorgio
- ½ tsp paprika – Organic Fair
- ½ cup Dijon Mustard – Sarafino
- 1/3 cup Amber Maple Syrup – Sarafino
- 1 tbsp Terra Apple Cider Vinegar – Sarafino
- ½ tsp sea salt
For the vegetables:
- 2 cups sweet potatoes, diced
- Sea salt
- 2 cups brussels sprouts, halved
- 2 tsp Virgin Olive Oil – Olearia San Giorgio
- 1 tsp cinnamon or nutmeg
- Ground black pepper – Organic Fair
Directions:
- Preheat oven to 425F.
- Spread Virgin Olive Oil on the bottom of large cast iron skillet. Add the chicken and season with paprika.
- In a medium bowl, whisk together the mustard, maple syrup, apple cider vinegar and sea salt.
- Spoon 1/3 of the sauce over the chicken thighs.
- Place the chicken in the oven and bake for 10 minutes.
- Toss veggies in Virgin Olive Oil, sea salt, pepper, and nutmeg/cinnamon.
- Remove the skillet from the oven and spoon half of the remaining sauce over top of the chicken.
- Add the sweet potatoes and return the skillet to the oven. Bake for another 10 minutes.
- Remove skillet from the oven and spoon remaining sauce over top. Add in the brussels sprouts.
- Return the skillet to the oven and continue baking for 20 minutes or until the potatoes and brussels sprouts are fork-tender and the chicken has reached an internal temperature of 165F.
