Ingredients for 1 sandwich
- 1 saffron and turmeric bun (or an artisanal bun of your choice)
- 1 seitan burger (vegan meat substitute) (chicken or pork burger would work as well!)
- 1 bunch of kale or spinach
- 1 1/2 tablespoons of tartufata
- 1 roasted red pepper
- 2 tablespoons of virgin olive oil
Burger Sauce:
- 1/2 cup of cooked corn
- 1/2 tsp of turmeric powder
Preparation
Prepare the sauce by tossing the already cooked corn in a pan, season with salt and pepper and add a glass of water.
Once heated through and the water has evaporated add the turmeric and toss together. Remove from heat and blend to create a smooth sauce.
Divide the bun in half, spread the tartufata on the bottom, add the kale (or spinach). Meanwhile sauté the burger in a little extra virgin olive oil. Once cooked add to the bun. Top with the roasted red pepper and the corn sauce.
