Get all the superfood benefits of Spirulina in a hearty vegetable soup! It’s gluten-free, full of veggies and kid-approved.
Ingredients for 4-6 people
- 1 package Sarafino Spirulina Stelline Pasta
- Fresh Green Beans (Or substitute for dried cranberry beans that you’ve prepared ahead of time, or canned green beans)
- Other vegetables you enjoy! We recommend carrots, zucchini and potatoes.
- 1 Onion, chopped
- 1 clove of Garlic, chopped
- 3-4 Zefirio Whole Plum Tomatoes, crushed
- Olearia San Giorgio Aspro Extra Virgin Olive Oil
- Sarafino Sea Salt
- Fresh Parsley (chopped)
- Sarafino Garlic Fused Extra Virgin Olive Oil
DIRECTIONS
- Prepare a vegetable soup base:
- Boil green beans and other vegetables in a large pot. Make sure there is enough water to cover all the vegetables.
- Add in onions, garlic, and crushed tomatoes.
- Simmer until everything is slightly tender. Add water until soup reaches the desired consistency, then let cool.
- Pour into blender and blend until smooth.
- Prepare the Spirulina Stelline Pasta:
- Fill a large pot with 2.5 litres of water. Bring to a boil and add 1 tbsp of sea salt.
- Add 250g of Spirulina Stelline, stir every few minutes for 8-10 minutes.
- Once suggested cooking time has almost elapsed, taste for doneness (al dente)
- Drain the pasta, leaving a little water for extra flavour.
- Add Olearia San Giorgio Aspro Extra Virgin Olive Oil.
- Add vegetable soup base to Stelline and mix well.
- Garnish with chopped parsley and a drizzle of Garlic Fused EVOO.
- Enjoy!
