Capers are pickled flower buds that are picked from a shrub-like bush and are then dried in the sun. They lend a salty, pungent caper flavour to recipes. These are the choice of many master chefs as you can use the salt in your dish as well!
Ideal Pairings/Uses: topping for fish or chicken, toss into a tomato sauce, on a salad or pizza, create a tapenade or pesto to serve on crostini, add to a seafood soup or stew, sprinkled on a potato or pasta salad or mixed into a dressing, with a bagel and lox

Fabrizia Funghi was started from a passion for mushrooms. The owner at the time, Vincenzo Sorrentino, sold mushrooms locally and abroad. It was this same passion that drove his son Giovanni Sorrentino, not to emigrate with his family (including daughter Enza) abroad, but to invest in the foundation of the company, thus contributing to the economy and development of his home town. The same authentic traditions and techniques are used today. The products are free of preservatives, additives, and are from the local environment.This range of tasty Italian antipastos can be enjoyed on their own, or added to many a dish to amp up the flavour. There are a variety of mushrooms, pickled vegetables, olives and capers, herbs and spices; there is also a fantastic line of spreads that are both spicy and zesty. Delicious on fresh bread, they also can be added to soups and sauces or used as a pizza sauce. With so many quality products to choose from, the uses of these antipastos are limited only by your own imagination.
